What is going to happen to his holdings when a regent dies?
fx. XZ of Serien has death...I think his heir needs an investiture...XZ's law and manor holdings will pass to his heir...? or they cab be takne by others until a new Baron will arise?

Usually it goes to and heir or is fought over.
A liege effectively commandeering the holdings, would likely not be looked upon very well.

Nothing happens; except the domain has no regent (see RG for details).
Usually an heir will emerge (or is already ready) and the interregnum will be short.

No. But the targeted domain won't have any RP to spend.

Note that other domains having a presence in the provinces in question could spend influence to oppose those that try to exploit the dead of the regent and might indeed be inclined to do so specifically when a regent is dead to avoid shifting the balance of power.
